1 1/2 cups brown sugar, firmly packed
1 cup vegetable oil
125g walnut pieces
1 1/2 cups grated zucchini (about 3 medium zucchinis)
1 1/2 cups plain flour
1 1/2 cups self raising flour
Combine, eggs, sugar and oil in electric mixer, mix until mixture is changed in colour.
Takes only a short time.
Stir in walnuts and zucchini, then sifted flours.
Spread mixture into well greased square tin with baking paper on bottom of tin.
Bake in moderate oven for approx. 1 hour.
Stand few minutes, turn onto wire rack to cool.
When the cake is cold, using an electric knife, I cut in half and then into slices and glad wrap each slice to place into freezer.
I only take out a slice as I need it. Takes only a short time to defrost.
